Dan is the third generation of the family to embrace the world of dairy farming. Alex was brought up in London and worked in corporate finance but, after meeting Dan, she did not take much convincing to quit her job and move to the country. Both Dan and Alex wanted to do something different: Dan wanted to turn the farm’s milk into something special and Alex wanted to promote a return to unprocessed, natural, farm fresh foods.
We had a great time experimenting making cheese and yoghurt on the AGA. We found that, by straining set yoghurt through cheese cloth, they could achieve a thick, creamy texture, which was an instant success with family and friends. As a result, The Dorset Dairy Co developed its first product, Dorset Strained Yoghurt, otherwise known as Dorset’s answer to Greek yoghurt, which has just won two stars in this year’s Great Taste Awards. Made using milk straight from the farm’s herd of Friesian-Holsteins, consumers know that the main ingredient of the highest quality and comes from a high-welfare cow, born and bred on the farm. Nothing is added but culture. Over 3 litres of milk go into 1 kilo of yoghurt as the traditional straining method removes the water and sugar from the yoghurt.
